Fffuuuuuuuuuuuu! The one that had less room and had to tap the socket onto the rusty bolt head spun off.
this is why people don't work on their own cars

No no, this is exactly why you do your own work. Think of how much wiser and experienced you are becoming, padawan. And if you had paid a pro to do it, they would have broken it off too and then charged you many more hundreds pissing you off on top of your current level, possibly sending you over the edge leading to god knows what badness you're capable of committing. It's better for all involved this way. (BTW invest in an oxy/acet rig, it's your friend for rust)

I'm headed to Sears to get a bolt out in a minute, I think there is enough to get a hold of it.

Good luck. I've never gotten any rusted bolt out with those extractors. I think you ought to get that oxy/acet rig instead.

If both broke I'd be buying a new manifold and Breaking more bolts off, but into the head this time.

Well That didn't work. But it did clean the rust off the bolts, so tomorrow after work I'll try & weld on a nut & see if that works.

Welding on a nut has always worked for me. Extractors have never worked for me. I have high hopes for your success.
